Chocolate Mint Cookie Crunch Cake Pops!

Ok...so I am trying to make new flavors of cake pops and these are just out of this world!  I have been making cake pops all week to prepare for a craft sale that I'm in on Sunday and have a pretty good handle on things...don't I get a phone call today while I am at work asking where my payment is for a craft sale at Bayport High School on Saturday...I'm panicking saying to the lady, I thought you sent an email back saying that you were full and she said, NO, I have a spot all reserved for you and it is my last spot and she says, we would REALLY like to have you in our sale because there isn't anything like this nor have we ever had cake pops and I think you will do really well!  So, if you know me, I say, SURE, I can do this no problem with working full-time, being a Mom and everything else that happens in my life!  I get off the phone and quick text my parents and tell them to quick read their email...I'm frantically sending an email to my Mom asking her if she will bake me 9 cakes and I am listing what kinds I need and how many of what flavors and where they are the cheapest and she emails me back...Hi Ho it's off to Walmart I go!  Whew!  What a lifesaver she is!!!  She said she was going to sew on my Christmas present today but now all I might get is a piece of material because she had to stop and bake my cakes...hmmmm...wonder what cool thing she is creating for me now!

Anywho...here are some pictures of the new pops I made last night...made a Devil's food cake with mint extract and a package of chocolate pudding mixed in...let that cool and crumbled up the cake and added crushed up Nabisco Chocolate Wafer cookies and chocolate frosting...mushed all up until it was like playdoh...rolled into balls and then dipped into Dark Cocoa Mint chocolate wafers and THEN as soon as they came out of the chocolate, I dipped the tops in crushed up Andes Creme De Menthe candies...OMG!!! that was a Little Pop of Heaven if I ever had one!!!!

  1. As a "Chocoholic" I really love this choco cake pops but since I never have to care about cholesteral or calories or any of that other stuff I think I might try it with butter, and maybe double up on the cocoa.

  2. I tried it with butter, and double up on the cocoa and it was delicious. I just didn`t take any photo of it.
